Enjoying something that I rarely do. But today on this glorious Monday, I am taking a few minutes for myself before heading off to work to enjoy a great cup of coffee and the delicious turkey sausage breakfast tacos that are a specialty of my niece, Shikia.  

She bakes them in muffin tins (egg mixture, turkey sausage, pico de gallo, cheese and jalapeños). Delicioso!
